Position Overview
Key Responsibilities
- Prepare and develop signature sushi sauces (eel sauce, spicy mayo, ponzu, teriyaki, miso-based sauces, etc.)
- Balance flavors (sweet, salty, umami, spicy, acidic) to complement fresh seafood
- Ensure consistency in taste, texture, and presentation
- Collaborate with head sushi chef to create new menu items
- Maintain food safety and sanitation standards
- Monitor ingredient freshness and quality
- Control portioning and minimize waste
Required Skills
- Strong knowledge of Japanese cuisine and sushi preparation
- Understanding of flavor pairing and sauce emulsification
- Knife skills and attention to detail
- Creativity in developing fusion and specialty sauces
- Ability to work efficiently in a fast-paced kitchen
