Position Overview

**Functions:**

Essential Duties and Responsibilities

+ Sets up and prepares equipment and/or mold mixer
+ Adjusting, calibrating and engaging controls
+ Completes all required documentation:
+ Meat temperatures
+ Batch weights or quantities
+ Trees per hour
+ Down time
+ Cleans and soaks casings
+ Reviews production flow sheet for production sequencing and raw material planned usage
+ Physically transfers pallets of raw materials, using fork lift to Velati staging area
+ Operation of: conveyor belts, Velati, forklift, pallet jack, dice cutter, and mixers
+ Visually inspects raw material before processing, notifies supervisor of any defects
+ Unloads and opens boxes filled with frozen raw meat to be fed onto conveyor
+ Checks temperature on meat blocks before dumping
+ Monitors conveyor for any jams or pile ups
+ Operates equipment to create batches, transports Vmaggs filled with salami mixture to stuffing
